Maximus Baked Goat Cheese and Spinach Lasagna

Lasagna is of course known as Bolognese, but it also comes in many varieties. For sunny days, we particularly enjoy a lighter version, with goat cheese and spinach. A true delight enhanced with a slight smoky flavor thanks to cooking in a Maximus wood-fired oven.

THE RECIPE IN VIDEO

Ingredients (for 4 to 6 people)

400g chopped and drained spinach

50 g of leaf spinach

150 g tomato sauce

300 g sliced ​​goat’s cheese

150 g smoked bacon (optional)

250 g buffalo mozzarella

10 g olive oil

8 sheets of lasagna

For the béchamel:

500 g of milk

35 g butter

35 g of flour

1 pinch of salt and pepper

Preparation of the lasagna recipe:

Start by making the béchamel sauce. To do this, first make a roux.

  1. Put the butter in a hot saucepan and let it melt completely, without letting it brown.
  2. Add the flour and let it brown slightly.

Chef's tip: For a light béchamel sauce, don't let it brown too much. For a sauce with a little more flavor, cook it a little longer.

  1. Add salt and pepper.
  2. Add the milk little by little, stirring constantly to avoid lumps.
  3. Let it cook gently, stirring constantly. Let the sauce thicken until it is roughly the consistency of yogurt.

Then assemble your lasagna in several layers.

  1. Brush the bottom of the dish with olive oil to prevent the pasta from sticking.
  2. Cover with lasagna sheets.
  3. Add a layer of béchamel sauce.
  4. Add a layer of chopped spinach, then top with mozzarella cheese.
  5. Repeat the same layers: pasta, béchamel, chopped spinach and mozzarella.
  6. Add another layer of pasta, then cover it with tomato sauce.
  7. Cover with spinach leaves and then goat cheese.
  8. Finally, add a final layer of pasta and cover with the rest of the béchamel sauce.
  9. Finish with the goat cheese and mozzarella.
  10. Finally, add the smoked bacon.

Chef's tip: The bacon is optional; for a vegetarian recipe, simply remove it.

  1. Bake in your Maximus wood-fired oven at 200°C. Place the dish in the center and leave it for about 35 minutes. Remember to keep an eye on it and turn the dish to ensure it cooks evenly.
  2. After 35 minutes, remove your lasagna from the oven. Serve hot and enjoy immediately.
