INGREDIENTS

  • 1 chicken weighing 1.6 to 1.8 kg

  • 1.5kg of potatoes (250g per person)

  • 8g of salt

  • 40g of chopped smoked bacon or lardons

  • 1 shallot

  • 20g maple syrup

  • 30g of butter

  • A small bunch of thyme

RECIPE PROCESS

  1. Lighting the Maximus Oven
  2. For this recipe, you'll need to thoroughly heat your Maximus wood-fired oven. That's why it's important to light it before you begin preparing the chicken and potatoes. You don't want the oven floor to be too hot, so you may want to load the kindling on one side of the oven instead of in the middle.
  3. Preparing the potatoes
  4. Cut the potatoes into large cubes of about 3-4 cm.
  5. Place them in a bowl of cold water
  6. Bring everything to a boil
  7. Preparing the chicken
  8. Place the shallot, cut into small pieces, inside the chicken.
  9. Brush the chicken with maple syrup using a kitchen brush.
  10. Sprinkle the bacon pieces over the chicken and tuck them into the joints.
  11. Add a little salt.
  12. When your Maximus oven is hot, place the chicken in the oven. Be careful: if your oven is too hot or the flames are still too high, the chicken may brown quickly, especially with the maple syrup. Don't hesitate to wait a little while.
  13. Close the door vent to smother the flames. Creating smoke in the oven will add a delicious smoky flavor.
  14. Continuing the preparation of the potatoes
  15. When the water is boiling, add the thyme sprigs. This infusion will subtly flavor your potatoes.
  16. Let it cook for about 7 minutes.
  17. Drain the potatoes and remove the largest sprigs of thyme.
  18. Complete cooking
  19. After the chicken has been in the oven for about 1 hour, add the potatoes to the dish.
  20. Feel free to add a little water to deglaze the chicken cooking juices.
  21. Let everything cook for about 30 more minutes.
