Our recipe for pike in a wood-fired oven
This simple recipe highlights the delicate flavor of pike and offers a delicious alternative to trout.
Ingredients :
- 1 whole pike, gutted and scaled
- 1 lemon, sliced
- 2 sprigs of fresh rosemary
- 4 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper
Cooking time and temperature:
- About 25-30 minutes (time may vary depending on the size of the pike)
- Preheat your wood-fired oven to a temperature of around 200°C.
Steps to prepare this recipe:
Wash the pike inside and out, then dry it gently with paper towels.
Make a few diagonal cuts on both sides of the pike to make cooking easier.
Season the pike inside and out with salt and pepper. Place a few lemon slices inside, add rosemary sprigs, and drizzle with olive oil.
Place the pike on a baking tray suitable for a wood-fired oven .
Place the baking sheet in the preheated wood-fired oven and bake for 25 to 30 minutes, checking regularly for doneness.
The pike is ready when the flesh is opaque and flakes easily with a fork.
