Maximus Winter Pizza Recipe
Ingredients (for 2 pizzas)
Homemade pizza dough
- 500 g of flour
- 10 g of salt
- 10 g of fresh baker's yeast
- 300 ml of lukewarm water
- 2 tablespoons of olive oil
Winter pizza toppings
- 150 g of thick crème fraîche
- 100 g mozzarella
- 100 g of raclette cheese (or reblochon for more character)
- 80 g of smoked bacon or raw ham
- 1 red onion, finely chopped
- 8 fresh button mushrooms, sliced
- Some crushed nuts
- Black pepper, thyme and rosemary
Preparation and cooking in the Maximus wood-fired oven
1 Preparation of the dough
- Mix the flour and salt in a large bowl.
- Dissolve the yeast in lukewarm water and gradually add it to the flour.
- Knead until you get a smooth, supple dough.
- Stir in the olive oil, then cover and let stand for 1.5 hours in a warm place.
2 Lighting the Maximus wood-fired oven

- Place a few logs in the oven and light with natural firelighters.
- Let the temperature rise for about 30 minutes , until it reaches 350-400°C .

3 Assembling and cooking the pizza
- Roll out the dough thinly and place it on a floured peel.
- Spread a thin layer of crème fraîche over the dough.
- Add the mozzarella, raclette cheese, bacon, onion and mushrooms.
- Place the pizza in the Maximus oven and cook for approximately 90 seconds to 2 minutes , turning it halfway through cooking.
- Add the crushed walnuts and a pinch of black pepper before serving.
