Maximus Winter Pizza Recipe

Ingredients (for 2 pizzas)

Homemade pizza dough
  • 500 g of flour
  • 10 g of salt
  • 10 g of fresh baker's yeast
  • 300 ml of lukewarm water
  • 2 tablespoons of olive oil
Winter pizza toppings
  • 150 g of thick crème fraîche
  • 100 g mozzarella
  • 100 g of raclette cheese (or reblochon for more character)
  • 80 g of smoked bacon or raw ham
  • 1 red onion, finely chopped
  • 8 fresh button mushrooms, sliced
  • Some crushed nuts
  • Black pepper, thyme and rosemary


Preparation and cooking in the Maximus wood-fired oven

1 Preparation of the dough
  1. Mix the flour and salt in a large bowl.
  2. Dissolve the yeast in lukewarm water and gradually add it to the flour.
  3. Knead until you get a smooth, supple dough.
  4. Stir in the olive oil, then cover and let stand for 1.5 hours in a warm place.

Tip & Trick : Use dry beech or oak wood for optimal combustion and an unrivaled smoky flavor.

  1. Place a few logs in the oven and light with natural firelighters.
  2. Let the temperature rise for about 30 minutes , until it reaches 350-400°C .
  3. Push the coals to the side for indirect cooking and install the pizza stone.
3 Assembling and cooking the pizza
  1. Roll out the dough thinly and place it on a floured peel.
  2. Spread a thin layer of crème fraîche over the dough.
  3. Add the mozzarella, raclette cheese, bacon, onion and mushrooms.
  4. Place the pizza in the Maximus oven and cook for approximately 90 seconds to 2 minutes , turning it halfway through cooking.
  5. Add the crushed walnuts and a pinch of black pepper before serving.
Tips for successful pizzas in the Maximus wood-fired oven


Let the dough rest for 24 hours in the refrigerator for a better texture and a more developed taste.
Do not overload the filling for even cooking.
Turn the pizza every 30 seconds to prevent it from burning.
Add fragile ingredients (arugula, nuts, raw ham) after cooking to preserve their flavor and texture.
Use a floured peel to easily bake your pizzas.
