Prepare your Maximus wood-fired oven:
Turn on the oven and let it heat up to 300°C. This intense heat, typical of wood-fired ovens, produces a perfectly crispy pizza in just a few minutes.
-
Preparation of mushrooms:
Carefully clean the autumn mushrooms, then slice them. Heat a little olive oil in a pan, add the chopped garlic, then fry the mushrooms with salt, pepper, and thyme sprigs until golden brown and the cooking water has evaporated.
-
Pizza assembly:
Roll out the pizza dough on a floured surface. Spread a thin layer of crème fraîche over the dough, then add the grated mozzarella. Arrange the sautéed mushrooms on top and sprinkle with pieces of fresh goat cheese.
-
Cooking :
Place the pizza in the hot wood-fired oven and cook for about 4 to 5 minutes, until the dough is golden brown and the cheese is melted.
-
Finishing :
When removed from the oven, drizzle with a little olive oil and add a few sprigs of fresh thyme to garnish.
Kitchen tip:
For an even more authentic taste, add a touch of grated truffle to the pizza just before serving. The warmth of the wood-fired oven will enhance this autumnal delight.
