THE RECIPE IN VIDEO
Ingredients (for 4 people)
2 beautiful trout
1 zucchini
2 tomatoes
A few basil leaves
½ red pepper
1 shallot
1 lemon
50g olive oil
20g of coarse salt with oregano
20g of white wine (chardonnet)
Preparation of the recipe
- Turn on the oven and raise the temperature to about 300°C. The fish will cook when the temperature drops.
- Brush the bottom of the dish with a little olive oil.
- Place the fish in the dish
- Cut the zucchini into cubes of about 2 x 2 cm and place them in the dish
Chef's tip: if there are large seeds, remember to remove the core of the zucchini
- Cut the pepper into thin strips and place it in the dish with the fish and zucchini.
- Then cut the tomatoes into small cubes and put them in the dish.
- Chop the shallot before adding it to the dish with the other ingredients.
- Add the olive oil in a drizzle, then the white wine.
- Sprinkle the salt and oregano mixture.
- Add the coarsely chopped fresh basil.
- Finish by zesting the lemon over the dish before squeezing it.
- Check the oven temperature, it should be around 180°C-200°C, and put it in the oven.
Chef's tip: close the oven door hatch, there should be no flames during cooking.
- After 30 minutes of cooking, it is time to take the fish out of the oven.
Serve the fish with the vegetables straight from the oven. You can serve it with rice for a slightly more substantial meal. All that's left to do is sit down and enjoy, and don't forget to bring fresh bread for the juice! Enjoy!
