What is the basis of a marinade?

There are several basic marinade recipes that can be used to make a barbecue marinade. These include:

  • Wine-based tenderizing marinade
  • The brine-style marinade with water, lemon and salt
  • The marinade that adds flavor with oil and herbs

How to marinate meat properly?

Once the meat is marinated, it can be drained and then cooked on the barbecue. Do not keep any excess marinade. The meat is then cooked as usual, according to your taste.

As mentioned above, marinating on a barbecue can also be done with fish and vegetables. It's also an opportunity to add flavor and create delicious and original recipes. The process will be the same as for meat, and you'll simply have to adjust the marinating time and cooking time.

Indirect cooking

With indirect cooking, the idea is to avoid putting the food in direct contact with the heat source, as can be the case with a charcoal barbecue, for example (the meat is practically in contact with the embers). A brick barbecue therefore allows indirect cooking if desired.

The papillotes

Cooking en papillote involves wrapping food in aluminum foil or baking paper and then cooking the entire dish. This steaming process keeps the food tender. All that's left to do is remove the packaging and enjoy.

The grill
