Recipe for your barbecue Rabbit skewers Caterpillar with three purees Ingredients (Serves 4): 2 rabbit saddles of 150g 250g cherry tomatoes 4 radishes 6 large tomatoes A few parsley leaves 2 olives for decoration 300g potatoes 300g carrots 300g broccoli 1 lime 1 tbsp honey Recipe preparation: Prepare the coulis: cut the tomatoes into small cubes and melt them over very low heat to make a coulis. Season with the chopped basil leaves. Roughly mash everything with a fork. Peel a carrot, cut it into thin slices. Marinate it in the lemon juice mixed with honey. Steam the vegetables for 30 minutes. Then puree them separately, sweetening with a little milk if necessary. Salt and pepper to taste. Bone the saddles and cut them into cubes. On skewers, alternate a cube of rabbit, half a cherry tomato, a slice of carrot, and so on. Cook the skewers on the barbecue for 5 minutes on each side. Finish assembling the caterpillars: to make the head, skewer a whole cherry tomato decorated with two olive tips for the eyes and finish with the radish with the leaves left on to make the caterpillar's tail. Arrange on the plate with tomato coulis and 3 dumplings of mashed potato. Serve hot.
