Wood-fired seafood platter

Preparation time: 30 minutes

Cooking time: 20-25 minutes

Recipe ingredients:

- 500g of mussels

- 500g of clams

- 300g of shrimp

- 4 large squid, cleaned and cut into rings

- 2 lemons, cut into quarters

- 4 cloves of garlic, minced

- 1 bunch of fresh parsley, chopped

- 1/2 cup dry white wine

- 1/4 cup olive oil

- Salt and pepper to taste

- 1 baguette, sliced

Preparation of this seafood recipe in a wood-fired oven:
  • Preheating the wood-fired oven:

- Light the fire in the wood-fired oven at least 1 hour before starting cooking to allow the oven to heat up properly.

- Once the flames are out and the embers are glowing red, make sure the internal temperature is around 220-250°C. Use a thermometer to check the temperature if necessary.

  • Seafood preparation:

- Rinse the mussels and clams under cold water, removing any debris and broken shells.

- Arrange the mussels, clams, shrimp and squid rings in a large baking dish.

- Add the lemon wedges around the seafood.

  • Seasoning:

- In a bowl, mix the minced garlic, chopped parsley, white wine, olive oil, salt and pepper.

- Pour this marinade over the seafood, making sure to coat it well.

  • Cooking :

- Place the dish in the preheated wood-fired oven.

- Cook for 20-25 minutes, stirring halfway through for even cooking.

- Seafood is ready when the mussels and clams are open and the squid and shrimp are cooked through.

  • Serve :

- Serve the seafood hot, accompanied by toasted baguette slices to enjoy the sauce.

The gourmet tip and trick:

- To add an extra touch of smokiness, place some fresh herbs like thyme or rosemary on the coals before placing the dish in the oven. This will infuse the seafood with a delicious smoky flavor.

Seafood skewers on the BBQ

Preparation time: 20 minutes

Cooking time: 10-12 minutes

Recipe ingredients:

- 300g of large shrimp, peeled and deveined

- 300g of scallops

- 2 squid, cleaned and cut into rings

- 1 red pepper, cut into squares

- 1 yellow pepper, cut into squares

- 1 red onion, cut into squares

- 2 lemons, cut into quarters

- 4 cloves of garlic, minced

- 1 bunch of fresh coriander, chopped

- 1/4 cup olive oil

- 1/4 cup lemon juice

- Salt and pepper to taste

- Wooden skewers (previously soaked in water)

Preparation of this barbecue seafood recipe:
  • Preparation of ingredients:

- In a bowl, mix the minced garlic, chopped coriander, olive oil, lemon juice, salt and pepper.

- Add the shrimp, scallops and squid rings to the bowl and mix well to coat with the marinade.

Let stand for 10-15 minutes.

  • Assembly of the skewers:

- On wooden skewers, alternate pieces of shrimp, scallops, squid, peppers, and onions. Finish each skewer with a lemon wedge.

  • Barbecue preparation:

- Preheat the barbecue to medium-high heat. Make sure the grill is clean and lightly oiled to prevent the skewers from sticking.

  • Cooking skewers on the BBQ

- Place the skewers on the hot barbecue.

- Cook for about 10-12 minutes, rotating the skewers halfway through for even cooking. The seafood should be opaque and cooked through, and the vegetables should be lightly charred.
