Wood-fired oven recipe: Provençal Tian revisited by My Barbecue

Ingredients (for 4 people):

- 2 eggplants

- 3 zucchinis

- 4 tomatoes

- 2 red onions

- 3 cloves of garlic

- Olive oil

- Herbs of Provence

- Salt, pepper

Preparation of the recipe:
  1. Preheat your Maximus wood-fired oven to 180°C.
  2. Wash and cut all the vegetables into thin slices.
  3. In a baking dish, arrange the vegetable slices alternating them to create a pretty pattern.
  4. Mince the garlic and sprinkle it over the vegetables.
  5. Drizzle generously with olive oil and sprinkle with herbes de Provence, salt and pepper.
  6. Bake for 45 minutes to 1 hour, until the vegetables are tender and lightly browned.

Chef's advice:

For an even more flavorful tian, add a few crushed anchovies to your olive oil before drizzling over the vegetables. Their flavor will blend into the dish for an explosion of Mediterranean flavors!

Barbecue Recipe: Marinated Vegetable Skewers

Ingredients (for 4 people):

- 2 peppers (red and yellow)

- 1 zucchini

- 1 eggplant

- 16 cherry tomatoes

- 1 red onion

- For the marinade: olive oil, lemon juice, garlic, thyme, rosemary, salt, pepper

Preparation of the recipe:
  1. Prepare your barbecue .
  2. Cut all the vegetables into large pieces (except the cherry tomatoes).
  3. Prepare the marinade by mixing all the ingredients in a bowl.
