FAQ advice: questions – answers special duck breast
At what temperature should duck breast be cooked on the barbecue?
Aim for a medium temperature (between 180 and 200°C). Too hot, and the fat will burn; too mild, and the skin won't cook.
A brick barbecue allows you to control the heat well by inertia , without overcooking.
How to avoid burning the duck breast?
- Do not place meat directly on open flames.
- Melt the fat skin side down slowly .
- Do not prick the meat: this will cause the fat to run and cause flames.
- Remember to move the grill away from the embers if necessary.
How to avoid flames burning meat?
- Remove excess marinade before cooking (the honey can caramelize too quickly).
- Use an indirect cooking zone if your barbecue allows it.
- Keep a spray bottle of water handy to douse the flames.
- If you have a lid handy, close it to smother the flames.
How long to cook duck breast?
- About 6 to 8 minutes on the skin side , until nicely colored.
- Then 4 to 5 minutes on the flesh side for a pink cooking.
- Adjust according to thickness and your taste.
What gourmet advice for a tasty duck?
Let the duck breast rest for 5 minutes after cooking under a sheet of aluminum foil: this allows the juices to distribute well, and the meat will be more tender.
