You've decided to cook traditionally by purchasing a wood-fired oven . If you want to use it to bake both bread and pizza, what are the differences in cooking these delicious specialties? Temperature, cooking time... Our answers and tips will have you licking your lips.

Bread oven : long cooking at constant temperature

  • Oven temperature: Bread bakes at approximately 300°C
  • Cooking time: 35 to 40 minutes depending on the shape, size and number of loaves.

This is a "top-down" baking process without the addition of additional heat during the baking process. The bread bakes in just over half an hour using the heat from the oven cavity and the heat released by the stones.

Pizza oven : fast cooking at high temperature

  • Oven temperature: Pizza cooks between 350°C and 400°C
  • Cooking time: 2 to 4 minutes depending on the ingredients.

Pizza cooks quickly, which requires a high heat that is constantly kept going. In a pizza oven, the goal is to reach a high temperature quickly, but without having to maintain it for a long time, since 2 to 4 minutes is enough to cook a pizza. In a pizza oven, the fire is lit with the door closed to increase the temperature more quickly. The fumes escape through the exhaust duct positioned in the oven chamber.

Our Maximus wood-fired oven can be used for both pizza and bread baking. Enjoy your purchase to the fullest! If you want to bake bread after baking pizzas, you will have to wait a while for the oven to cool down sufficiently, losing about 50°C.
